Reset

I think it’s fitting that today is the start of a new year because I devote Tuesdays to all aspects of health. Although I decided to ramp up my efforts at the end of November, like most people the holidays got to me and it is definitely time to recommit. I didn’t stop moving but the raw foods did take a backseat for a couple of weeks.

I began looking for a reset. A lot of people fast, diet and make all sorts of resolutions and promises on New Year’s Day. All I want to do is commit to more raw food. I can’t forget (nor do I want to forget) the way I felt throughout July when I was raw vegan for 30 days. It wasn’t just the increased energy. Anxiety and fatigue seemed like states of being that could never be attributed to me.

So my reset is to cling to what I know: walking, being a high raw vegan embracing juices and smoothies, yoga, dance classes, massages, prayer, therapy and letting go of fears and mindsets that no longer serve me.

This week’s word is “cleansed.” Even though I am very busy during the week, I made the decision to move myself a bit more and incorporate more fruits and veggies via smoothies and juices. I ended up with a 8.4lb loss but that wasn’t the best thing about this week. It was how clean I felt. I was more clear, energetic and focused. I started to think about setting fitness goals like a race and it seemed more real than ever. I don’t want to get too excited. I am guilty of signing up for a couple things I wasn’t prepared to complete in the past so the next time I do it, I want to feel confident.

Knowing rather than guessing is best so I will keep putting in the work and accepting the results peacefully.

It’s the only way to I know to truly love and honor myself during this process.

Meatless Mondays: Luna’s Living Kitchen

I was out of town, specifically in Charlotte this past weekend visiting family. We knew we would be leaving in the afternoon and wanted to stop by a raw vegan restaurant I found online: Luna’s Living Kitchen.

Since we are just getting home, I knew I would be in no mood to cook a meal and eat late so I thought I would share our meal at Luna’s Living Kitchen located in the South Bend of Charlotte. Even though I prefer to cook these meals, it’s good to know there are options everywhere to eat plant-based and even raw vegan!

We started off by sharing a sweet potato sushi roll. I decide to get a cacao smoothie and Jeff chose a Mango Tango. It had a kick of cayenne which we both enjoyed!

Jeff had been eager to try the raw manicotti made with zucchini and cashew cream and tomato sauce. He added the lentil soup for warmth. The coolness of the manicotti threw him a little even though he was warned about it but neither of us could deny how tasty the cashew cream was and how well it mimicked the taste of ricotta cheese. I chose one of the warmer entree options: BBQ sliders. That was our favorite dish! The oyster mushrooms was such an amazing filler compared to mock meats like tofu, tempeh or jackfruit. When we come back to Charlotte, we are definitely coming back!

Meatless Monday Christmas: Chickpea Flour Omelette

This morning our family gathered for breakfast and opening of presents. I decided to look up vegan breakfast options that aren’t smoothies/oatmeals. We found the Chickpea Flour Omelette recipe from strengthandsunshine.com.

INGREDIENTS

INSTRUCTIONS
  1. In a small bowl, mix together all ingredients except the greens and optional veggies.
  2. Let stand for 5 minutes. Add more water if too thick. It should be pancake batter consistency (but not too runny).
  3. Meanwhile, heat a lightly oiled non-stick pan over medium heat. Once the pan is hot, pour the batter in the pan like you’re making a pancake. Cover the pan with a lid and cook on low heat for 3 minutes until the edges dry and bubbles form on the surface.
  4. Now add the greens and/or veggies to one half of the omelette and take a spatula to fold the omelette over in half and cook uncovered for 2 more minutes.
  5. Remove and transfer to a plate before topping with ketchup, salsa, hot sauce, etc.!

We used the Follow Your Heart brand for the egg replacer and used salsa on top. Next time, a little more salt and green peppers will be added. The consistency reminded me more of a Southwestern chickpea flour cake than an omelette. I was happy to have this option and will cook again soon.
